Superbowl Snack

January 31, 2013 by Amy Hudson

Looking for a cute, healthy Superbowl Snack you can make with the kids?  I’ve got a Superbowl inspired veggie tray you can make with the kids before the big game.  This is not too fancy, but I’m sure people will get a “kick” out of extra effort you put into it!

Superbowl Snack

First, lay celery along the center of your platter for the field.  If you have a big crowd, you could use two layers of celery.

Next, create the lines across the field.  I used white string cheese sliced into thinner sections and just laid them across the celery.  An almond football goes down right onto the line of scrimmage.

To make the “fans” I used several serving cups to stand some red bell pepper and baby carrots in to look like they are slightly elevated from the field.  I filled in the extra areas with some cashews.

As a finishing touch, I just laid some pretzel sticks down to look like a goal post.  (I tried to make them stand in the air, but it was just too much work – even for me!)

What are your plans for the Superbowl this year?  What Superbowl Snacks are you ready to chow down on?

Guess How Much I Love You?

January 30, 2013 by Amy Hudson

Guess How Much I Love You by Sam McBratney is one of my girls’ favorite books.  With a simple message about the great measure of the father and son bunny’s love for one another, it is a perfect Valentines Day read.  The story ends with the father bunny saying to the baby bunny, “I love you to the moon and back”.

Take a few minutes and read the story while snuggling with your child, then make this lunch.

howmuchlove 3

To make the rabbits, I used some turkey folded up into small squares for their faces.  I added ears using raw almonds, and used chocolate sprinkles (I know, I was lazy) for the eyes.

Next, I sliced several strawberries in half and cut a small “v” out of the center to look like a heart.  I laid them on the plate to look like they were ascending and descending from the moon.

I sliced a banana into a small crescent shape to use for the moon, and finally used some greek yogurt to create the stars, the arrow going to the moon and back, and the bottom portion of the bunnies’ faces.

Below is the super easy technique I used.

Scissor Method

I love using yogurt, especially Greek yogurt, for decorating a plate and creating a great design that would be hard to do using just food.

howmuchiloveyou 2

Of course, you can make this same snack out of anything you wish!  If you have a bunny shaped cookie cutter, you could easily make the two rabbits out of a sandwich.  You could also make the arrows using thin strips of banana if you don’t want to use the yogurt.  The moon could be made out of pineapple, cheese, or a yellow pepper.

Use your imagination!

Snowflake Breakfast

January 28, 2013 by Amy Hudson

Celebrate winter, snow, a snow day off school, or just make breakfast fun with snowflake pancakes!

Snowflake Pancakes

Snowflake pancakes are so easy to create.

Prepare your pancakes, and place one onto the center of a plate.

Next, use an aerosol whipped cream container to “draw” a simple snowflake design as shown above.  Make a hexagon around the border of the pancake, and add a three pointed branch coming out of each of the six points.

For a finishing, snowy touch, sprinkle some powdered sugar in the middle.

Serve snowflake pancakes alongside some fresh raspberries or strawberries and a small serving of scrambled eggs for a delightful snow day breakfast the kids will love!

Cucumber and Hummus Cupcakes

January 25, 2013 by Amy Hudson

I have a recipe for the most healthy cupcake you will ever eat!  I am working on some ideas for our Facebook friend Amber’s upcoming cupcake party, and today I’m showing you how to make a super healthy cupcake!

By the way, we also put together some cute, healthy ideas for her other child’s Teenage Mutant Ninja Turtle Party.  Check them out!

Veggie Cupcakes

Aren’t they cute?  Not as sweet as a regular cupcake, but you certainly can feel much better about munching on these during a cupcake party!

Our veggie cupcakes are made out of two ingredients: cucumber and hummus.

Prepare the “cupcake wrappers”

veg cupcake 2

Peel a cucumber, then take a fork and, while firmly pressing down, pull the fork from one end of the cucumber to the other.  This will create little grooves that will look like little cupcake wrappers!

veg cupcakes 3

Slice your scored cucumber into approximately 3/4 inch thick sections.  You want the cucumbers to be thick enough to hold your hummus, but thin enough to take a bite from.

Once you have cut your cucumber into sections, take a melon baller and scoop approximately 2/3 of the middle out of the cucumber.

Icing your cucpcakes

veg cupcakes 4

I used a star shaped tip with a large opening.  This will create a beautiful, fluffy frosting look on your finished product.

Veg cupcakes 5

Fill your piping bag with hummus.  I used classic hummus but there are lots of yummy flavors you could use such as pine nut, roasted garlic, basil pesto, or roasted red pepper.

Veg Cupcakes 7

Starting in the center, pipe a large dollop of hummus and then swirl your piping bag around until you are happy with the look of your little cupcakes.

For a finishing touch, I added a sliver of red pepper in the center.  See how pretty they turned out?

If you have a theme for your child’s upcoming birthday party and you want to pick our brains here at Creative Kid Snacks, simply post a message for us on our Facebook Wall telling us your theme and the date of the party, and we will come up with at least 3 healthy options to put out at your party to go along with your theme!  Make sure you’ve “liked” us too so that you can be sure to see your special post!

Valentines Day Apples

January 23, 2013 by Amy Hudson

Valentines Day is coming up!  Last year I showed you a cute way to make use of your heart shaped cookie cutter in this Valentines Day Snack.  This year, I have more cute little treats coming up for you soon, but first I’d like to show you a healthy Valentines Day snack.

Valentines Day Apples - Sweet, healthy afternoon snack for Valentines Day

Apples are perfect for cutting into hearts with the cookie cutter!

Slice an apple so that you have a surface area large enough for your cookie cutter to go through.

Next, spread some peanut butter and sprinkle some Rice Krispies over each slice.  The cereal adds a little crunch.

You can serve them open faced like this, or you can put them together for a Valentines Day apple sandwich!

Downhill Skier

January 21, 2013 by Amy Hudson

Do you love skiing?  Have you taken a family trip to Colorado to hit the slopes this year?  Even if you haven’t gotten to go in person, celebrate the fun of winter sports with this cute little lunch.

skiier

Cottage chesse is a favorite in our home.  Any lunch with cottage cheese as one of the elements is sure to be gobbled up quickly!

To create this lunch, take a baby carrot and slice it in half lengthwise so it lies flat on the plate.  Chop off one of the rounded edges from the bottom.  This will be your skier’s body.  Next, slice the other half of the carrot you didn’t use for the body into small sticks to serve as the arms and legs.  Create the look of bended knees by cutting what would be one leg in half and laying on the plate to look like it is bent.

Take some thinly sliced celery and cut to desired length for skis.  Add two small pretzel sticks for the poles.

Now, take a spoon and spread the cottage cheese onto the plate to look like it is sloping upward on one side as a mountain would.

I decided to add a fun touch in the background by using some string cheese for a chair lift.  Use a small rounded edge of a carrot for a little guy, and give him one leg (that you are seeing from the side), and one ski.

Give each skier a cap to keep warm.  I used turkey breast cut to shape with a little puff of cottage cheese on top.

Your kids will love this protein and fiber filled snack.

Creative Birthday Party Food: Teenage Mutant Ninja Turtles

January 13, 2013 by Amy Hudson

Today’s party ideas are for Amber’s upcoming Teenage Mutant Ninja Turtle Party.

Do YOU have a kids birthday party coming up soon?  Would you like some creative kid snack ideas for your party?  Please let us know on Facebook!  I’d love to help you come up with some unique foods to serve!  Tell me the theme, and let’s get creative together!
………………………………………………………….

One of our Facebook friends, Amber, asked for some cute food ideas for her son’s upcoming Teenage Mutant Ninja Turtles birthday party.  I hadn’t realized that the beloved Ninjas had made a comeback and have lately become popular for the kids!

In case you need a refresher, here they are!

 (source)

Following are some ideas for this Cowabunga-mazing party!
1)  Serve PIZZA
You have to have the turtles’ favorite dish as one of your main courses!
2)  Donny’s drink
Super easy to make and more festive than regular drinks, these turtle beverages are sure to get a comment or two from your guests.  There’s even a cute little tie in the back.  The best part?  You can write the kids’ names on the construction paper mask once they are handed out!
See how they are made HERE.
3) Ninja Turtle Party Apples
These guys would be adorable to either serve along with all of the party food, or even to wrap up in cellophane and send home as little favors.  See how they are made HERE.

4) Leonardo’s Sword

Option 1:  plain celery
Option 2: peanut butter swords
I found these tiny skewers at the dollar store.  Slice celery, making some small and some long pieces.  Slide a small piece horizontally down the skewer.  Next, slide the long piece on vertically.  They hold up and look just like a little sword!
5) Donatello’s Bo
Pretzel rods look just like Donatello’s bo.

If you wanted to jazz these up a bit, you could buy some peel-able Twizzlers and wrap some around the middle for the grip.

6) Turtle Shell cake (or Rice Krispy) pops
A friend of mine got the above cake pan on amazon and made adorable cake-sickles for her girl’s birthday.  We’ve all seen the round cake pops that look like a ball, but I had never seen one like this.
For the TMNT party, make cake, rice krispy treats, brownies, or cookies in the pan and frost with buttercream frosting to look like a turtle shell.  Use brown and green and make something like the following pattern:
(source)
Spread the brown frosting all over the surface first, then pipe the green frosting on in this pattern.  Practice on a piece of wax paper first.  You can even add some green or chocolate sprinkles over the top for some texture!

Teenage Mutant Ninja Turtle Apples

December 28, 2012 by Amy Hudson

Got a Teenage Mutant Ninja Turtle fan in the house?  Try these Ninja Turtle Apples for a party favor.

I am working on a post full of ideas for one of Creative Kid Snacks’ Facebook fans, Amber.  She asked me for some ideas on a Teenage Mutant Ninja Turtles birthday party.
I have a bunch of ideas to share for this upcoming party, but I couldn’t wait to share this one with all of you!  I remember watching the Ninja Turtles when I was growing up; and they have come back and have become quite popular on Nickelodeon.
What we are making today are a healthy version of caramel apples.  Green apples piped with white and dark chocolate, chilled, then enjoyed.

Creating Teenage Mutant Ninja Turtle Apples

Start by melting approximately 1/2 cup of white chocolate chips.  (This will be for only the whites of the eyes, more white chips will be melted later to create the colored chocolate).  I added a 1/2 teaspoon of vegetable oil just to make sure the resulting consistency would be smooth enough to pipe onto the apples.  Melt the chocolate by microwaving it for one minute, stirring at 20 second intervals.  Total melt time for this amount of chocolate will be between 45 seconds and 1 minute.
Once the white chocolate is ready, spoon into a piping bag or a plastic zip bag with a tiny corner snipped off and pipe little ovals onto each apple.  Chill in the refrigerator for 10-15 minutes.
Next, microwave 1 1/2 – 2 cups of white chocolate chips, depending on how many apples you want to make.  Add 1-2 teaspoons of vegetable oil.  Microwave for approximately one minute, stirring at 20 second intervals.
Divide the melted chocolate into 4 small bowls (or as many bowls as you want colors of headbands).  To make it easier on yourself you could choose one turtle to make and color all of the chocolate that color.
Add food coloring to the chocolate.  I use the Wilton gel food coloring.  The colors are very true.  Again, make as few or as many colors as you like, depending upon how ambitious you are.
Once your colored chocolate is ready, spoon it into a piping bag (I suggest a simple zip bag with a tiny corner sliced off if you are making all four colors, because washing out a piping bag and attachment between every color will be a lot of work).
Pipe around the whites of the eyes you’ve already created.  You will make a figure eight around them.  Then, continue the color around to the back of the head.  Connect your circle, then add a tie and two hanging sections.  It may help to put the apple down and pick up again to get a better position for your piping hand.
Once all of your masks are finished, chill again in the fridge until hardened.
Lastly, melt 1/2 – 1 cup dark chocolate chips, (depending on how many turtles you are making).  In my experience, adding oil is not necessary because dark chocolate chips seems to melt into a smoother consistency than white chocolate chips.  Again, melt for approximately 1 minute, stirring at 20 second intervals.

TIP:  Melt chocolate in a glass bowl as opposed to ceramic.  Use a wooden spoon or plastic spatula as opposed to a metal spoon.  The ceramic and metal conduct more heat, which ends up cooking the chocolate more than it should be, and could result in clumpy, useless chocolate.

Place your melted dark chocolate into a piping bag of your choice, and make eyes and mouths for each turtle.  When I looked up the turtles, I saw the mouth that looked like an elongated figure eight as shown in the photo below.
(source)
I drew a mix of regular smiles and those elongated figure eight expressions on the turtles.  They came out pretty cute, I thought.  By the way, the orange melted chocolate on Michelangelo is the result of me accidentally adding too much oil to the white chocolate before I melted it.  If you add too much oil, that is what will happen.  I left him in there to show you, so that you make sure to get it right!
Lastly, insert your popsicle sticks to make them look like a caramel apple.
How fun is this serve at your theme party?  Mostly apple, not too much sweet, and the perfect little extra for the party!  You could even wrap these in cellophane and send them home as favors!
Cowabunga, dude!

Snowman Milk Chugs

December 26, 2012 by Amy Hudson

Need a great kids drink for a Winter Party?  While the adults sip their spiced eggnog, serve the kids milk in the form of little snowmen!

Perhaps you’re hosting winter play date and looking for something to serve.
Making them is so simple, and the kids will love to drink them as they decorate cookies or snack on some healthy play date snacks.
The best part is, the kids can help you get them ready to serve to their friends!

We bought two different kinds of milk drinks.  The lucerne brand were 4 for $5, which was a great price, and the Deans were a little closer to $2 each.  I decided to try both in order to see which shape came out cuter.

We used some pipe cleaners and a black, brown, and orange sharpie in order to create our snowmen.  How much simpler can you get when it comes to supplies?

Next, remove the wrappers.  I’m very partial to my cute little assistant!

Take two pipe cleaners of matching color and wrap around the bottle two thirds of the way up.  This will create your snowman’s scarf.  My four year old girl did a great job of choosing a color for each snowman and wrapping each one.
Take your sharpie and draw your faces using black for the eyes, smile, and buttons; orange for the nose; and brown for their stick arms.
As you can see, the two different bottles both come out cute, so you can use either brand depending on your preference.
I actually liked the bigger bottles better, since the “scarf” stayed in place better.  There is a groove in the bottle at just the right spot!
Hope you enjoy the Snowman Milk Chugs!
