Easter Morning

The resurrection of Jesus Christ is, in my eyes, one of the singe most important events of all time.  On Easter, we celebrate the death, burial, and resurrection of Jesus, conquering sin and death, and paving the way for all who believe in him to have forgiveness and everlasting life.

After Jesus’ death, his body was placed in a garden tomb by a couple of his disciples.  Three days later, Mary Magdelene went to the tomb to anoint the body with spices and oil, and saw the stone rolled away from the tomb entrance.  As they entered the tomb, they saw an angel who said to them, “Don’t be alarmed,” he said. “You are looking for Jesus the Nazarene, who was crucified. He has risen! He is not here. See the place where they laid him. 7 But go, tell his disciples and Peter, ‘He is going ahead of you into Galilee. There you will see him, just as he told you.” (Mark 16:6 NIV).

Resurrection day proved that Jesus was who he said he was.  The son of the most high God, able to defeat even death, so that we who believe may live!  Amen!

This Easter snack will help you to teach the story of Jesus’ resurrection to your children.  Read the story from Mark 16 or John 20, (or read it from the Children’s Bible – here’s the one we use), and then make this snack together.

To make this snack, start with the tomb.  Slice an apple near the core on one side so you have a nice large chunk of apple.  Then slice that in half so that there is one round “stone” piece and another that looks like an empty tomb.  Easy!  Next, thinly slice a baby carrot and place the strips around the tomb to look like beams of light.  Add some celery grass underneath the tomb.  (After all, the tomb was in a garden)!

Next, slice a hard boiled egg in half to use as the angel’s body.  Carefully pop out the yolk of one of the halves and place it on top as the angel’s head.  Slice two small traingles off of the half of boiled egg you didn’t use for the body, and place those next to the body as arms (well, sleeves).  Add some pretzels as wings, and use a small almond for his smile and tiny brown sprinkles for his two eyes.  I normally use raisins for eyes, but this guy’s face was too small for that!

You now have a delicious, nutritious, and educational bible story for lunch.  Enjoy!

Superbowl Snack

Looking for a cute, healthy Superbowl Snack you can make with the kids?  I’ve got a Superbowl inspired veggie tray you can make with the kids before the big game.  This is not too fancy, but I’m sure people will get a “kick” out of extra effort you put into it!

Superbowl Snack

First, lay celery along the center of your platter for the field.  If you have a big crowd, you could use two layers of celery.

Next, create the lines across the field.  I used white string cheese sliced into thinner sections and just laid them across the celery.  An almond football goes down right onto the line of scrimmage.

To make the “fans” I used several serving cups to stand some red bell pepper and baby carrots in to look like they are slightly elevated from the field.  I filled in the extra areas with some cashews.

As a finishing touch, I just laid some pretzel sticks down to look like a goal post.  (I tried to make them stand in the air, but it was just too much work – even for me!)

Guess How Much I Love You?

Guess How Much I Love You by Sam McBratney is one of my girls’ favorite books.  With a simple message about the great measure of the father and son bunny’s love for one another, it is a perfect Valentines Day read.  The story ends with the father bunny saying to the baby bunny, “I love you to the moon and back”.

Take a few minutes and read the story while snuggling with your child, then make this lunch.

To make the rabbits, I used some turkey folded up into small squares for their faces.  I added ears using raw almonds, and used chocolate sprinkles (I know, I was lazy) for the eyes.

Next, I sliced several strawberries in half and cut a small “v” out of the center to look like a heart.  I laid them on the plate to look like they were ascending and descending from the moon.

I sliced a banana into a small crescent shape to use for the moon, and finally used some greek yogurt to create the stars, the arrow going to the moon and back, and the bottom portion of the bunnies’ faces.

Below is the super easy technique I used.

I love using yogurt, especially Greek yogurt, for decorating a plate and creating a great design that would be hard to do using just food.

Of course, you can make this same snack out of anything you wish!  If you have a bunny shaped cookie cutter, you could easily make the two rabbits out of a sandwich.  You could also make the arrows using thin strips of banana if you don’t want to use the yogurt.  The moon could be made out of pineapple, cheese, or a yellow pepper.

Use your imagination!

Cucumber and Hummus Cupcakes

I have a recipe for the most healthy cupcake you will ever eat!  I am working on some ideas for our Facebook friend Amber’s upcoming cupcake party, and today I’m showing you how to make a super healthy cupcake!

By the way, we also put together some cute, healthy ideas for her other child’s Teenage Mutant Ninja Turtle Party.  Check them out!

Veggie Cupcakes

Aren’t they cute?  Not as sweet as a regular cupcake, but you certainly can feel much better about munching on these during a cupcake party!

Our veggie cupcakes are made out of two ingredients: cucumber and hummus.

Prepare the “cupcake wrappers”

Peel a cucumber, then take a fork and, while firmly pressing down, pull the fork from one end of the cucumber to the other.  This will create little grooves that will look like little cupcake wrappers!

Slice your scored cucumber into approximately 3/4 inch thick sections.  You want the cucumbers to be thick enough to hold your hummus, but thin enough to take a bite from.

Once you have cut your cucumber into sections, take a melon baller and scoop approximately 2/3 of the middle out of the cucumber.

I used a star shaped tip with a large opening.  This will create a beautiful, fluffy frosting look on your finished product.

Fill your piping bag with hummus.  I used classic hummus but there are lots of yummy flavors you could use such as pine nut, roasted garlic, basil pesto, or roasted red pepper.

Starting in the center, pipe a large dollop of hummus and then swirl your piping bag around until you are happy with the look of your little cupcakes.

For a finishing touch, I added a sliver of red pepper in the center.  See how pretty they turned out?

Downhill Skier

Do you love skiing?  Have you taken a family trip to Colorado to hit the slopes this year?  Even if you haven’t gotten to go in person, celebrate the fun of winter sports with this cute little lunch.

Cottage chesse is a favorite in our home.  Any lunch with cottage cheese as one of the elements is sure to be gobbled up quickly!

To create this lunch, take a baby carrot and slice it in half lengthwise so it lies flat on the plate.  Chop off one of the rounded edges from the bottom.  This will be your skier’s body.  Next, slice the other half of the carrot you didn’t use for the body into small sticks to serve as the arms and legs.  Create the look of bended knees by cutting what would be one leg in half and laying on the plate to look like it is bent.

Take some thinly sliced celery and cut to desired length for skis.  Add two small pretzel sticks for the poles.

Now, take a spoon and spread the cottage cheese onto the plate to look like it is sloping upward on one side as a mountain would.

I decided to add a fun touch in the background by using some string cheese for a chair lift.  Use a small rounded edge of a carrot for a little guy, and give him one leg (that you are seeing from the side), and one ski.

Give each skier a cap to keep warm.  I used turkey breast cut to shape with a little puff of cottage cheese on top.

Your kids will love this protein and fiber filled snack.

3 Creative Christmas Veggie Trays

Today is all about creative veggie trays for the holidays.  Transform your traditional relish tray with these three vegetable platters that rock!

This year, volunteer to bring the vegetable platter to Christmas dinner!
Create an awesome veggie tray that everyone will love!  The kids will LOVE to help you!

 Use a large round serving platter.  Start with the celery, and create several zig-zaggy rows going accross.

Next, fill in the yellow peppers, saving one for the “hook” on top, then carrots, then cherry tomatoes, and you are all set!

I got the idea for this Christmas present veggie tray when I found the following little boxes at Walmart.

I bought the boxes with the inspiration for this veggie tray, but knowing I could eventually use them as gift boxes down the road.

What I did to create the present was to place all four boxes onto a larger platter, tie a nice thick ribbon around them to make them look like a present and then LINE them.

To line each box, simply open a baggie, roll the top zipper part over so it lays on the outside of the bag, and fill with the veggies.  This will ensure the boxes stay dry and, the best news of all, the veggies are easy to put away once the tray is done being used!

Try this fun and popular idea with the kids this year!

For this tree, I first created the outside branches of the tree with cut celery.  It is just the perfect shape and look to go on the outside.
Next, add sliced cucumber to fill in the middle of the tree.  This cucumber layer can be 2-3 layers deep if you have a large crowd to serve.
Add broccoli to fill in any gaps between the cucumbers and celery, and place some nice red cherry tomatoes to look like ornaments.
To ensure the baby carrots used to make the tree’s “trunk” stand up, cut them in half so they sit flat on the tray.
Finish with a yellow pepper star, and you are all ready to dig in!
Variations:
Use deli meat for the trunk by placing thin rolls next to each other in a vertical pattern.
To feed a bigger group, use celery for the entire bottom layer, cucumbers for a second layer on top of that, etc.

To me, the very best part of making these fun trays with your kids is the fact that they are munching on veggies the whole time!

Healthy Christmas Snacks for the Kids

Looking for some healthy snacks to serve this Christmas?

Get the kids into the Christmas season with these fun snacks and lunches!

#1:  Veggie Christmas Tree

Use cut celery arrange on an angle to create the shape of the tree.  Slice a baby carrot into wheels for the ornaments.  Cut a yellow pepper into the shape of a star for the top of the tree.
Create the trunk by rolling a slice of deli ham into a one inch wide roll-up and folding it in half.  Slice the bottom off to create a straight line if you wish.
My favorite part of this snack are the snowflakes.  I created them by slicing some string cheese into wheels, then carefully slicing little triangles out of them (from the outside in).
Serve with a little ranch for dipping, and enjoy!
(My kids ate this whole snack up!  So much good fiber and protein!)
Variations:
Use cucumbers for the tree (sliced in “sticks”)
Use a carrot or two for the trunk and cherry tomatoes for the ornaments
Use yogurt for the snowflakes

#2: Santa Panini Sandwich

I made this snack by first making a turkey and cheese panini sandwich on our Cuisinart Panini grill.

After placing it on the plate, I spooned some cottage cheese around the bottom of the plate and left a little gap where Santa’s mouth would be. Note: the sandwich is placed with the rounded side of the bread down.

Next, I created his hat and nose with some strawberries.  Finish the look of the hat with a little whipped cream and finish with some raisin eyes.

This one was a favorite!

#3: Rudolph the Red-Nosed Reindeer

I made Rudolph out of a peanut butter sandwich.  Leave the round (top) part of the bread in tact, then slice into an oval for the main part of the body as shown.

From the remaining portion, slice four thin legs and a head.  Think of cutting the shape of a shoe for the head.  Add a raisin eye, a strawberry nose, and two pretzel antlers.

A little pine tree made of sugar snap peas completes the look of Rudolph’s flight through the air!

#4: Cottage Cheese Snowman

Meet one of the first creative snacks ever created.

Our sweet snowman has a cottage cheese body , raisin eyes and buttons, 1/2 a baby carrot for a nose, and celery sticks for arms.

Scoop the cottage cheese onto the plate with a small spoon into three circles.  Slice your baby carrot in half and add for his nose.  Place his eyes and buttons on, and finish with arms.  Done!

You can’t get much healthier than this for a festive winter snack!

Variations:
Use pretzels for his arms to look more like sticks
Use yogurt for his body
Use blueberries for his buttons

#5: Holiday Wreath

My daughter Grace asked for a wreath for lunch.  I decided to go with celery for the greenery as opposed to lettuce or cucumbers, which, depending upon your child’s taste buds, you could definitely use.  My girls love celery, so I went with that.

Next I added carrots and grapes sliced up for the “berries” of the wreath.  You could use cherry tomatoes, red bell peppers, or even strawberries here, but I used what I had on hand.

The bow was made out of a slice of ham.  I cut one full slice from the deli into quarters, and rolled each up as big as I wanted it to be for the parts of the bow.

Once all that was done, I snapped the photo.

Before I served it, though, I had the idea to add some background “snow”!

This is how I served it, and, as usual, it was gobbled up!

Which version do you like better?  I really can’t decide.  This second one is definitely more filling for lunch, though, and the girls do love their cottage cheese.   So for that reason alone, I know my kids would vote version 2!

Mike Wazowski (2 versions)

Monsters Inc is one of our favorite Disney Movies.  Mike Wazowski is one of the hilarious characters who works with Sulley.  I have two versions of Mike Wazowski to make for your Monsters Inc fan!

Do you recognize this guy from Monsters Inc.?  Mike Wazowski is made of a honeydew melon sliced and cored.  His eye is made of yogurt, a kiwi, and a blueberry.  His mouth is also made of bluberries.
Monsters Inc is one of the girls’ favorite Disney movies.  It’s one of those that they always watch from start to finish, never once losing interest.  It’s always great to have a few movies like that in the stash!

Here is another version of Mike, this time with sugar snap peas for the green part of his eye.  I thought that kiwi went better with the yogurt and other fruit in version 1, but loved the green color the sugar snap peas provided in version 2.
I sliced him up in order to make the eating part easier for my little Disney fan.
I can’t WAIT for Christmas season!  I have some really fun posts coming up for you with some ideas for fun snacks to get the kids in the spirit!  Not that they need any help with that!

Healthy Halloween Snacks

Healthy Halloween Snacks are hard to come by sometimes.  For those of us who are into providing healthy Halloween Snacks, here are two to try.
Create a spooky spider in his web!
Peel string cheese and lay it on the plate in a pentagon shape starting on the outside layer.  Move inward, creating another smaller pentagon within the first, and so on.  I ended up with four layers of pentagons.  Next, lay additional string cheese at the junctions of the different corners, and anywhere else you’d like, until you have what looks like a web!
Next, slice a grape in half for the spider’s body.  Thinly slice the other half of that grape plus half of another one to create the spider’s legs.
Finally, add some raisin eyes, and he is finished!

Winnie the Pooh

We are in love with Costco’s strawberries.  We’ve bought them all summer and they are consistently delicious.
This week I had some strawberries in the house as well as some organic colby jack cheese, also from Costco.  I decided a Winnie the Pooh snack was in order.
Cut cheese to shape using a sharp knife.  I think I used two slices to make this snack, giving the leftover cheese to my two year old.  Next, create a shirt with strawberries sliced in half to lay flat on the plate and fit together to look like a shirt.
Add Pooh’s nose and eyes with some raisins, and draw his mouth and “Hunny” pot using the technique shown below.  Serve the rest of the yogurt on the side, and you have a fun and healthy snack!
